The time turner allows you to go back in time, but you cannot change the past. As Harry says in the film, it’s already happened. The trio see the executioner slice a pumpkin, but from afar they think it’s Buckbeak. Everything Harry and Hermione did with the time turner occurred in the original time line as well, such as the rock hitting Harry in the film and the trio hearing two people running ahead of them in the book. So, they never brought Buckbeak from the dead.
